When Orange credit your pay-monthly bill and it exceeds the value of that bill, does it carry over to the next month? Eg, if Orange owe you ￡100 and credit it to your account, and your bill that month costs ￡60, will the remaining ￡40 be credited to next months bill?

Yes that is exactly how it works.
If is is an extremely large amount then they will credit it into your bank account. But the norm is exactly how you described yep unless they convert it to time as i have had done a few times
